Chicken Parmesan




Chicken Parmesan
2 Lbs. boneless, skinless chicken breasts
2 sleeves Ritz crackers, finely crushed (I suggest you crush them still inside the sleeves)
1 Tbsp. garlic powder
1/2 cup melted butter
1 cup Parmesan cheese
2 Tbsp. parsley
Salt & Pepper
1 cup shredded Mozzarella

Preheat your oven to 350 degrees. In a shallow dish, combine parmesan, crackers, parsley, garlic powder, salt and pepper.

Dip the chicken into the melted butter, then roll in the cracker mixture. Place the chicken into a 9x13" baking dish and top with remaining butter and sprinkle the rest of the cracker mixture on top.

Bake for 35 minutes, remove from the oven and top with mozzarella cheese. Bake another 5-10 minutes, or until cheese is melted.

Serve with spaghetti and marinara.
