Olive Garden's Pork Filettino
4 small pork tenderloins
2 garlic cloves
2 Tbs. fresh rosemary, chopped
1 Tbs. sage, chopped
6 Tbs. extra virgin olive oil
Salt, to taste
Pepper, to taste

Season pork with garlic, rosemary, sage, extra virgin olive oil, salt and pepper. Allow to sit in marinade for 30 minutes.

Grill marinated pork approximately 4-5 minutes on each side, scoring with diamond-shaped marks. Cut into slices.

Serve pork garnished with roasted potatoes.



Roasted Potatoes
2 Lbs. red bliss baby potatoes
6 Tbs. extra virgin olive oil
8 garlic cloves, chopped
2 Tbs. butter, melted
2 Tbs. fresh rosemary, chopped
Salt, to taste
Pepper, to taste

Preheat oven to 450 degrees F.

Wash and dry potatoes. Cut into wedges and place in a large mixing bowl. Toss the potatoes in extra virgin olive oil, butter, garlic, rosemary, salt and pepper.

Transfer the potatoes onto a sheet tray. Roast for 25-30 minutes. Shake the pan occasionally for even roasting. Serve!
