Moscato Cupcakes





Moscato Cupcakes
2 1/2 cups all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1 1/4 cups sugar
1 cup oil
1/3 cup Moscato
3/4 cup buttermilk
2 large eggs
1 tsp. white vinegar

Preheat the oven to 350 degrees F. Prepare 2 cupcake pans with liners. Combine the flour, baking soda, salt and sugar, and shift. Combine the oil, Moscato, buttermilk, eggs and white vinegar, and mix until blended. Mix the wet ingredients into the dry mixture, and mix until just blended. Scoop into the prepared cupcake liners, filling each 3/4 cull. Bake at 350 degrees for 15-20 minutes or until done. Should make 12-18 cupcakes.

Moscato Vanilla Frosting
4 oz. cream cheese, room temperature
4 oz. butter, room temperature
2 Tbs. Moscato
1/2 tsp. vanilla
2 cups powdered sugar

Combine the cream cheese and butter, mixing them well. Add the Moscato and vanilla, and mix together. Add the powdered sugar and whip until smooth and light. Frost your cooled cupcakes.
