Butterfinger Cupcakes




Hershey's Perfectly Chocolate Cupcakes
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cups cocoa
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp. vanilla extract
1 cup boiling water

Heat the oven to 350 degrees. Line a muffin pan with paper bake cups.

Stir together the sugar, flour, cocoa, baking powder, baking soda, and salt in a large bowl. Add the eggs, milk, oil, and vanilla. Beat with a mixer on medium for 2 minutes.

Stir in boiling water. Yes, the batter will be thin. Fill the cups 1/2 full with batter (any more than that, and yes, the cupcakes will rise up and bake over while in the oven). Bake 22-25 minutes. Cool completely, and frost.


Butterfinger Icing
6 full size butterfingers (plus some to cut up on top if you would like)
1 stick butter
1/2 cup peanut butter
1 cup powdered sugar
2-4 TBS milk

Note: Follow the directions IN ORDER. The first batch I made came out very oily, and I discarded the whole batch, all because I put the Butterfinger crumbs in after the powdered sugar. I didn't have any more crushed butterfingers, so I ended up making the frosting without the butterfingers or milk the second time around, and used the crumbles I still had to sprinkle in the frosting mix a little (about a handful) and to decorate the top of the frosted cupcakes with.

Unwrap your candy bars. Using a vegetable peelers, scrap the chocolate off the bars into a bowl, you will use the crumbles later on. Finely crush the butterfingers, in a blender if possible, or by putting them in a zip lock bag and rolling over with a rolling pin. Set aside.

In the bowl of an electric mixer, beat the butter until soft and creamy. Then add in peanut butter, mix until combined well. Add the butterfingers crumbs. Mix until fully combined. Slowly mix in powdered sugar.

Once all is mixed well and desired color is achieved add in 1 TBS of milk until you have reached the desired consistency. (As previously  mentioned, I didn't use any milk the second time around, and it was fabulous!)
