Salted Caramel Apples
2 cups granulated sugar
1 1/2 sticks butter, at room temperature, cut in pieces
1 cup heavy cream, at room temperature
1 Tbsp. high-quality sea salt flakes
6 apples, washed
1 cup crushed walnuts, mini chocolate candies, mini marshmallows, or crushed walnuts
6 sturdy craft sticks

To make the caramel sauce, pour the sugar in a heavy-bottomed sauce pan in an even layer. Turn the burner to medium and heat the sugar for 4-5 minutes. Do not touch or stir the sugar. Watch it very carefully - it will liquefy suddenly and turn golden-brown. When the sugar is completely liquefied, remove it from the heat. Let cool for 30 seconds, then quickly stir in the butter, cream and salt. Transfer the sauce to a large bowl and refrigerate until cool.

Butter a baking sheet for the caramel apples to sit on. Insert a craft stick into the top of each apple. Put each topping in a shallow dish. Roll each apple through the cooled caramel, then through the desired topping. Place on the buttered baking sheet. Refrigerate to let caramel set. Refrigerate any leftovers.

Makes 6 apples and 2 cups of caramel sauce.
