Shrimp Alfredo
1 Lb. linguine pasta
1 Tbs. butter1 Lb. cooked shrimp, peeled and de-veined
4 cloves garlic, minced
1 cup half-and-half
6 Tbs. grated Parmesan cheese
1 Tbs. fresh parsley, chopped
Salt to taste
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes, or until al dente; drain. (*Note:* I always add a splash of EVOO or plain olive oil to the pasta while it's cooking. I feel it gives the pasta an extra umph for taste and texture)
In a large skillet, sauté the shrimp and garlic in the butter for about one minute. Pour in half and half; stir. Sprinkle Parmesan cheese in, one Tbs. at a time, stirring constantly. After all the cheese is added, mix in parsley and salt. Stir frequently, making sure it does not boil. Sauce will take a while to thicken.
When sauce has thickened, combine with cooked pasta noodles, and serve hot.
Note: this was a BIG hit... the family loved it, and it was so easy to do! I would just suggest measuring and chopping first, as I did mine during cooking. So yummy!
