Carol's Chinese Chicken Wings
12 chicken wings
1½ tsp. soy sauce
½ LB broccoli
½ tsp. salt
1½ Tbsp. sesame seed oil
Oil for frying chicken
1 slice ginger, cut thin
1 clove garlic, minced
1 Tbsp. sherry
2 Tbsp. oyster sauce
1 tsp. sugar
1 tsp. cornstarch
2 scallions
Marinate the chicken wings in soy sauce for a minimum of 2 hours. Deep fry chicken in oil until golden brown. Save about 2 Tbsp. of oil and stir fry scallions in oil, add ginger, sherry, and wings; cover with water and cook for 15 minutes. Add oyster sauce, sugar and ½ of the sesame seed oil. Stir fry for 15 seconds.
Add about 2 Tbsp. water with the cornstarch, and add to the stir fry to thicken. Cook for 2-3 minutes.
While preparing the wings, cook the broccoli, and add the rest of the sesame seed oil on top.
