Fancy Tea Sandwiches
Cookie cutters in assorted shapes
6 slices whole wheat or white bread
2 Tbsp. softened cream cheese
9 thin slices of peeled cucumber
2 slices whole wheat or white bread
2 Tbsp. peanut butter, or room temperature cream cheese
2 Tbsp. low-sugar strawberry jelly, or your favorite jam
2 tsp. softened butter or mayonnaise
1 slice roast turkey
2 slices cheddar cheese
Spread the softened cream cheese on one slice of the bread. Top with the cucumbers, overlapping them slightly. Place the other slice of bread on top, and press down slightly. Wrap with plastic wrap.
Spread the peanut butter on one slice of bread. Top with jam. Place the other slice of bread on top and press down slightly. Wrap with plastic wrap.
Spread 1 tsp. mayonnaise or butter on one side of each slice of bread. Top one slice with turkey. Add the cheese on top. Place the other side of bread, mayonnaise side down, on top and press down slightly. Wrap in plastic.
Refrigerate the sandwiches for 30 minutes.
Remove the sandwiches from the refrigerator. Unwrap them and then cut just the crusts from each chilled sandwich. Using a cookie cutter or a knife, cut each sandwich into shapes such as squares, diamonds, circles, triangles, or rectangles. Arrange on a platter, and then serve with your child's favorite tea or drink.
